Homemade Keto Low Carb Peanut Butter Cups

If you love Reese’s Peanut Butter Cups, but want a low-carb, sugar-free alternative, these Keto Peanut Butter Chocolate Cups are for you! With simple, wholesome ingredients and healthy fats from MCT oil, this is the perfect guilt-free treat.

Ingredients:

Chocolate Layer:

  • 1 cup sugar-free chocolate chips

  • 1 tbsp MCT oil

Peanut Butter Filling:

  • ½ cup unsweetened peanut butter (creamy)

  • 1 tbsp MCT oil

  • ½ tsp vanilla extract

Instructions:

  1. Melt the Chocolate: In a microwave-safe bowl, melt the sugar-free chocolate chips and 1 tbsp MCT oil in 30-second intervals, stirring until smooth.

  2. First Chocolate Layer: Spoon about 1 tsp of melted chocolate into each liner of a mini muffin tin (or silicone mold). Swirl to coat the bottom evenly. Refrigerate for 10 minutes to set.

  3. Make the Peanut Butter Filling: In a separate bowl, mix peanut butter, 1 tbsp MCT oil, and vanilla extract with a fork until smooth.

  4. Add the Peanut Butter Layer: Spoon about 1 tsp of the peanut butter mixture onto the hardened chocolate. Refrigerate for another 10 minutes.

  5. Top with More Chocolate: Finally, cover each peanut butter layer with another 1 tsp of melted chocolate and smooth it out.

  6. Chill & Enjoy: Refrigerate for at least 30 minutes until fully set. Store in the fridge or freezer for a quick, delicious keto treat!
