Ingredients:
Chocolate Layer:
1 cup sugar-free chocolate chips
1 tbsp MCT oil
Peanut Butter Filling:
½ cup unsweetened peanut butter (creamy)
1 tbsp MCT oil
½ tsp vanilla extract
Instructions:
Melt the Chocolate: In a microwave-safe bowl, melt the sugar-free chocolate chips and 1 tbsp MCT oil in 30-second intervals, stirring until smooth.
First Chocolate Layer: Spoon about 1 tsp of melted chocolate into each liner of a mini muffin tin (or silicone mold). Swirl to coat the bottom evenly. Refrigerate for 10 minutes to set.
Make the Peanut Butter Filling: In a separate bowl, mix peanut butter, 1 tbsp MCT oil, and vanilla extract with a fork until smooth.
Add the Peanut Butter Layer: Spoon about 1 tsp of the peanut butter mixture onto the hardened chocolate. Refrigerate for another 10 minutes.
Top with More Chocolate: Finally, cover each peanut butter layer with another 1 tsp of melted chocolate and smooth it out.
