Ingredients (4 Servings)

  • 2 cups cooked chicken (shredded or diced – canned, rotisserie, or leftover)

  • ½ cup avocado oil mayo (Primal Kitchen or homemade)

  • ¼ cup finely chopped celery

  • 2 tbsp chopped red onion

  • 1 tbsp Dijon mustard (check for sugar-free)

  • 1 tbsp fresh lemon juice

  • ½ tsp garlic powder

  • ¼ tsp salt & pepper (to taste)

  • ½ tsp dried dill or parsley (optional)

  • 1 head butter lettuce or romaine (for wrapping)

  • ¼ avocado, sliced (optional for topping)

Instructions

  1. Prepare Chicken: If using canned chicken, drain and shred with a fork. If using leftover or rotisserie chicken, dice or shred into small pieces.

  2. Mix Dressing: In a bowl, combine avocado oil mayo, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Stir well.

  3. Add Ingredients: Mix in the chopped celery, red onion, and dried dill/parsley. Add the shredded chicken and toss until fully coated.

  4. Assemble Wraps: Take 2–3 large butter lettuce leaves per wrap. Spoon the chicken salad onto the lettuce leaves and top with sliced avocado if using.

  5. Serve or Store: Enjoy immediately, or refrigerate the chicken salad for up to 4 days in an airtight container. Assemble wraps fresh when serving.
