Cottage Cheese Berry Ice Cream (Low-Carb, High-Protein)

Ingredients:
1 cup full-fat cottage cheese
½ cup mixed berries (fresh or frozen – blueberries, raspberries, strawberries)
1–2 tsp allulose or erythritol (optional, to taste)
½ tsp vanilla extract (optional)
Pinch of sea salt
Instructions:
Blend all ingredients in a high-speed blender or food processor until smooth and creamy.
Taste and adjust sweetness if needed.
Eat immediately as soft serve OR
Pour into a container and freeze for 2–3 hours for scoopable ice cream.
If frozen too long, let sit at room temp for 10 minutes before scooping.
