Cottage Cheese Berry Ice Cream (Low-Carb, High-Protein)

Ingredients:

  • 1 cup full-fat cottage cheese

  • ½ cup mixed berries (fresh or frozen – blueberries, raspberries, strawberries)

  • 1–2 tsp allulose or erythritol (optional, to taste)

  • ½ tsp vanilla extract (optional)

  • Pinch of sea salt

Instructions:

  1. Blend all ingredients in a high-speed blender or food processor until smooth and creamy.

  2. Taste and adjust sweetness if needed.

  3. Eat immediately as soft serve OR

  4. Pour into a container and freeze for 2–3 hours for scoopable ice cream.

  5. If frozen too long, let sit at room temp for 10 minutes before scooping.
